Ingredients for Sabudana Khichdi
Sago – 1 cup
Peanuts – 1/2 cup
Potato boiled – 1
Chopped green chillies – 2-3
Chopped coriander leaves – 3-4 tablespoons
Cumin seeds – 1 tsp
Curry leaves – 8-10
Ginger – 1 inch piece
Lemon – 1
Sugar- 1 tsp
Desi Ghee – 2 tablespoons
Black salt/rock salt – as per taste
How to make Sabudana Khichdi
Sabudana Khichdi is a traditional fruit dish. To make it, first clean the sabudana and wash it twice. After this, immerse the sabudana completely in water and leave it for 5-7 hours. This will make the sabudana swell properly. Now put peanuts in a pan and dry roast them. After the grains are roasted, crush them a little.

After this, boil the potatoes and peel them and cut them into pieces. Chop green chillies, green coriander and grate ginger. Now transfer the sago to a big plate and add crushed peanuts to it and mix. Add one teaspoon of sugar and black salt as per taste and mix it and keep it aside.
Now add 2 tablespoons of Desi Ghee in the pan and heat it. After the ghee melts, add cumin seeds and curry leaves and fry. After some time, add grated ginger, green chilies and boiled potato pieces and fry. After cooking for some time, add the sago mixture in the pan. Mix it well with the spices with the help of a ladle.

Make sure that the ingredients in the pan and the sabudana mixture mix well with each other. After this, cook sabudana khichdi until it becomes transparent. After this, add coriander leaves and lemon juice to the khichdi and mix, then turn off the gas. Delicious sabudana khichdi is ready.
