Explaining the reason behind this, he said that doing so helps in increasing resistant starch to reduce the glycemic index. Apart from this, he advised adding vinegar to potatoes. According to Dominguez, studies have shown that adding vinegar (especially malt vinegar) to potatoes can reduce the glycemic index. Eat vegetables and protein first. According to Dominguez, this can help reduce blood sugar after meals.
