In this, a gravy is prepared with peanuts, tamarind and sesame and brinjal is cooked in it. Its taste is quite different which will definitely be liked. Material
500 gms small brinjals
1/2 tsp cumin seeds
1/2 tsp fenugreek seeds
10-12 curry leaves
1/2 tsp turmeric
1/2 tsp red chilli powder
To make the gravy
1 tsp cumin seeds
2 tsp coriander seeds
1 tsp sesame seeds
1/4 cup peanuts and onions (roast both together and grind to make powder)
1 tablespoon tamarind pulp
Green chillies as per taste
Oil
Salt to taste
Method
Cut the brinjal, leave its stalk as it is and soak it in salt water. Heat oil in a pan. Add cumin seeds, fenugreek seeds, sesame seeds, curry leaves, turmeric powder and red chili powder. After squeezing the water from the brinjal, add it to the spices and cook it for 10 minutes. Heat the remaining oil and add the ground spices to it and cook for 3 minutes. After this, add tamarind pulp, green chili and fresh coriander leaves and leave it on low flame. Now add the brinjal to the gravy and cook on low flame for 10 minutes. Hyderabadi Brinjal is ready. Serve it with hot rice.
