Ingredients to make:

Eggs: 6-8 (boiled and peeled)

Onion: 2 (finely chopped)

Tomatoes: 2 (finely chopped)

Ginger-garlic paste: 1 tablespoon

Green chillies: 2-3 (finely chopped)

Red chili powder: 1 tsp

Coriander powder: 1 teaspoon

Turmeric powder: 1/2 tsp

Cumin seeds: 1/2 tsp

Coriander: 1/2 tsp

Garam masala: 1/4 tsp

Oil: 3 tbsp

Salt: as per taste

Green coriander: (for garnishing)

Boil the eggs and peel them. Heat oil in a pan and add cumin seeds. When the cumin seeds crackle, add onions and fry them until golden brown.
Add ginger-garlic paste and fry for 1 minute. Add tomatoes and cook till soft. Add red chilli powder, coriander powder, turmeric powder and salt and mix well. Add some water and let the gravy thicken. Add green chillies and garam masala and mix. Add eggs and gently mix it into the gravy.
Cover and cook for 2-3 minutes. Garnish with green coriander and serve with hot roti or paratha.

You can increase or decrease the amount of green chillies as per your preference. Do not overcook the eggs so that they remain soft and tasty. You can also add some cream or curd to the gravy.
