Ingredients to make Mexican Rice
Basmati rice – 2 bowls
Red capsicum – ½ part
Yellow capsicum – ½ part
Green capsicum – ½ part
Sweet corn – 1 cup
Rajma – 1 cup
Onion – 2 chopped
Tomato puree – 1 ½ cup
Oregano – 2 tsp
Tomato sauce – 3 tbsp
Green chili – 2 finely chopped
Garlic – 4 finely chopped
Olive oil – 3 tbsp
Green onion – 1 bunch
Coriander leaves – ½ cup
salt – as per taste
How to make Mexican Rice
Soak the rice in water for half an hour. Cut onion and capsicum into small pieces. Heat oil in a large vessel and add garlic and green chilies to it.
When the garlic becomes red after roasting, then add onion to it and fry on low flame till the onion becomes soft.
When the onions are fried, add the soaked rice to it and fry the rice for 2 minutes on high flame. Then add all the three types of capsicum, tomato puree, sauce and fry for 5 minutes.
Now add oregano, sweet corn, boiled kidney beans to the rice and add water as required. Cover and cook the rice and keep stirring it in between, so that the rice does not burn.
When the rice is cooked, turn off the gas and chop the cleaned onion leaves and coriander leaves and add them to the Mexican rice. This rice can also be made in refined oil instead of olive oil.
